Sometimes some of the best dishes are the one made from leftovers in the cabinets and the refrigerator.

Something like a frittata.  It’s one those dishes that is basically a clean out the cabinets dish for me.  I just take whatever vegetables that I have, along with some onions and garlic, add some kind of meat if I have on hand, and then cook or bake them with eggs.  Or just going through the cabinets and finding some tomatoes and making them into a tomato sauce, then just poaching the eggs in the tomato sauce.  It’s why if you go into my kitchen, I like to always have the basics like olive oil, parmesan cheese, onion, and garlic. That way, whenever I am making one my clean out the cabinets meal, I’ve got whatever I need to put it together.

On our San Francisco Food Tour of North Beach\Little Italy and Chinatown, it’s always interesting to see what everyone thinks are the kitchen basics that they need to have.  It’s usually not based on the neighborhood; it’s more so based on each person individual way of cooking. It usually comes from a combination of their family background and what they like to cook or eat.  It’s probably the reason on our San Francisco Food Tours, the food is always so exciting. It’s someone’s dish that they really like to cook or eat themselves.  They don’t usually do a clean out the cabinets meal, however each dish does have their own personal spin. At the same time, they are like me, when I see something fresh at the market, my mind starts racing about a great way to make it.  The good news is that they do the same thing. The result is that the dishes are always something fresh and delicious. It’s a great way to cook and eat.
