Slow Cooking

Being home from our San Francisco Food Tour, I usually like to cook dinners. Some days, I like to put out the slow cooker, so when dinner comes about, all I have to do open the slow cooker, I can just open it up and serve dinner.  Chicken usually works well, however I find that if I just put the chicken in the slow cooker with whatever else that I like, such as potatoes, vegetables, or whatever, I need to sauté and brown the chicken or it doesn’t usually turn out very well.  The other things that I noticed I’ve got to remove the skin after I sauté the chicken, otherwise the dish comes out greasy.

Beef usually needs to be browned as well, before it goes into the slow cooker. If the beef is very lean, I usually need to add a little olive oil, along with some beef broth.

On our San Francisco Food Tours, everyone has those techniques that they like to use to slow cook dishes.  Most of them like use enameled cast iron pot.  I like use something like that when I‘m cooking something in the oven and want to cook something at a low temperature for a couple of hours.
