Being home from our San Francisco Food Tour of North Beach\Little Italy and Chinatown, sometimes I have a desire for comfort food.  For some reason, I had a desire for meatloaf yesterday.  I’ve never been a big beef eater, so I decided to use some ground turkey.  The only challenge is that ground turkey does not have a lot of fat, so if one is not careful, it can come out dry.  I like using ground turkey that is 93 percent lean, rather than 99 percent lean, as it comes out a little better.  The other thing is that I like to do is add things like butter or oil, something that will help to hydrate the ground turkey.  Also, I try not to add anything that can soak up liquid, so the ground turkey can stay hydrated.  If you like breadcrumbs, it is important to use them sparely, as the breadcrumbs can soak up liquid, so make sure that you use enough liquid to compensate for liquid that the breadcrumbs might soak up.  As long, you keep aware of those things, you can pretty close to the same recipes for beef meatloaf.

Once we get back to our San Francisco. Food Tours, we’ll have a great time enjoying their versions of comfort food.  And, that will be a delicious experience.
