While we’re on a  break from our San Francisco Food Tour of North Beach\Little Italy and Chinatown, we are cooking some of our favorite dinner at home.  Like many people, I like having crunchy foods. The challenge with that is sometimes that can be fried foods. If I’m am deep frying some foods, there a couple of ways to do that.  One way is to use something vegetable oil and get the oil very hot and deep fry the foods at that very high heat.  Many of the stops on our San Francisco Food Tours that make fried foods will frequently use something like that method.

I recently got an air fryer and been trying different foods in the air fryer to see how they turned out.  I have really surprised that many of the foods that I would normally use a deep fryer have turned pretty well I the air fryer.   In this case, what is  unusual is that usually restaurants have equipment that is better than I have a home.  A fryer is definitely an example.  Professional fryers that are used by restaurant are much more expensive than what most people could have at home.   It’s the reason that when you see a recipe that a restaurant uses, it’s always a good idea to think how you many need to modify it for your home use.  They may have different equipment that most people have at home.   It’s not always necessary to change the recipe, however it’s always a good idea to check.
