It’s always interesting for me how one can take a simple ingredient and end up with an amazing dish.

Fennel is a good example, if you braise it (sauté it quickly at a high heat until it browns a little), toss it some juice and the rinds from a Meyer lemon, then in the fronds from the fennel (the leaves), you end with up with a simple, but incredibly satisfying and delicious dish. I see that a lot on our San Francisco Food Tours of North Beach\Little Italy and Chinatown. People take a simple ingredient, tweet it a little and end up with a great result.

Coffee is another example of that. If one really thinks abut it’s just ground roasted beans with water. And yet, if it’s done at the right temperature and the beans are roasted just right, it ends up being something pretty good.

On our San Francisco Food Tours, we get to that simple ingredient, coffee, every day. In our case, we usually have it in a cappuccino or a latte. We also to relax and slowly enjoy it. Made the right way, taking that simple ingredient, it’s a great thing to have. Cover it up with things like syrups, too many additions, and you can’t taste the coffee and that simple ingredient just get covered up. So, we’ll stick to tweeting simple ingredients in great dishes and drinks. And then of course, we’ll enjoy them.
