Fall is almost here and on our San Francisco Food Tour of North Beach\Little Italy and Chinatown, that means soup season. Each neighborhood uses different foods, but soup still reigns surprise. In Chinatown, the sizzling rice soup is a great way to enjoy the season. Rice with shrimp and chicken, along with some sizzling rice is a great way to warm your insides. In North Beach\Little Italy, squash signals all kinds of soups. My favorite is always butternut squash soup. That is one of those soups that is so good, I could eat it at every meal. It is a really easy soup to make. I like to just cut the squash in half, scoop out the seeds, then roast it in the oven for about 30-45 minutes about 350 degrees. You can then mix the squash with whatever liquids you want to use to turn it into soup. Personally, I like chicken stock, but you can use whatever kind that you like.
On our San Francisco Food Tours, we really like taking whatever is fresh and enjoying them. Fresh food has so much flavor that you really don’t need to do much to it. And being a soup lover, there is not much that you cannot turn into soup. From asparagus to squash to corn, there is not much that you cannot turn it into soup. With a fresh salad or bread, you have dinner all ready to go. And, it is just warming enough for a fall meal.
