Using Citrus Fruits

While I’m home from our San Francisco Food Tour of North Beach\Little Italy and Chinatown, I tend to do a lot of cooking.  One the ingredients that I use a lot is lemons.  Lemons are a great to brighten up the flavor of a variety of foods from sauces to soups.  It’s a great way to perk up foods.  As much as I like using lemon juice, there is even more flavor in the rind of the lemon.  I’ll even use a combination of both to give some foods that extra perk.  It’s the reason that if I’m making something like a lemon tart, I’ll use combination of both lemon juice and lemon rind.  There a couple of ways to get the rind.  One is to use handheld grater and grate or file the lemon rind off the lemons.  I like using a lemon zester.  It takes ribbons of rinds off the lemon.

On our San Francisco Food tours, most of the stops will not use lemons, they also use a variety of citrus fruit, from limes to oranges for a start.  Just like lemons, it’s great to use the juice from the citrus fruit, as well of the rind.  The combination of the rind and the juice produces an even more intense citrus flavor.
